Toasted cinnamon-sugar almonds just like you'd get from the fair or stadium!
Separate egg yolks from white and place into mixing bowl. Beat egg whites until they a foamy. Add vanilla and beat again until mixed thoroughly. Pour in your 4 cups of almonds and then stir or toss almonds in the bow until they are coated in the mixture.
In another bowl mix your sugars, salt, and cinnamon. Pour about 1/3 of the mixture into the almonds stirring or tossing the almonds to coat them.
Grease a 10x15 jelly roll or any flat pan and pour on almonds. Bake them at 300°F for about 20 minutes then stir them up on the pan. This should cause the remaining sugar/cinnamon that's on the pan to clump on the almonds and make them look just like the ones at the fair. Continue cooking them for at least another 15 minutes then sample them until the nuts are cooked through. Caution: THEY WILL BE HOT! When the almonds are cooked through take the pan out of the oven and let them cool off to the side for a bit. Once cooled the sugar coating should be nice and crunchy while the almond is left a little more tender. Make sure to store them in an airtight container to keep the fresh.
