A wheat free, super low carb, quiche made from soy sausage, soy cheese and egg substitute.
Mix first three ingredients and press on bottom and partly up sides of 2, 9" or 10" deep dish pie plates. Bake at 350 for 20 minutes.
In large skillet over medium heat, sautee mushrooms, shallots and green onions for a few minutes until just soft. Crumble sausage into skillet and heat through. Remove from heat and pour into mixing bowl. Add remaining ingredients, in the order given, and stir to combine. Very gently (to not disturb the nut crust) LADLE the egg mixture into the crusts. Bake at 350 until set, 25-30 minutes.
You may use regular bulk sausage and regular cheese if you prefer. Soy products are not safe for some diabetics and others with such dietary restrictions.
