This is a basic but delicious rub for a pork roast.
1. Bring the roast to room temperature by removing it from the
refrigerator 30 minutes before cooking.
2. Make the rub in a small bowl.
3. Preheat the oven to 350°F.
4. Coat the roast completely with the prepared rub.
5. Place on a rack in a roasting pan and pour 1/2-inch of
water into the bottom of the pan.
6. Roast the pork until a thermometer inserted into the center
of the roast registers 145°F, 55 to 75 minutes.
7. Remove from the oven, tent loosely with foil and allow let
it rest for 15 minutes before carving.
Makes 6 servings
You can use dried orange zest instead of fresh; add 2 1/2 teaspoons
