Suggest a better descriptionHeat oils in pan over medium heat.
Add onion and cook for 5-6 mins. Add garlic and ginger and cook for further 2mins.
Add rice and stir to coat grains of rice with oil. Add stock and bring to boil. Cover, reduce heeat and simmer for 5 mins. Place chicken in a single alyer over rice. Cover and simmer for another 8-10 mins until rice is tender and chicken is cooked through.
Remove from heat and set aside to rest for 5mins before serving.
Serve sprinkled with spring onion and chilli drizzled with soy sauce.
This is good even without the chicken as a fried rice accompaniment
Went very well with BG Coriander and chill chicken in coconut gravy.
