Sweet and gingery carrots.
1. Preheat oven to 425 degrees.
2. Julienne carrots, and mince ginger and garlic
3. Place carrots on a baking sheet and coat with olive oil and sprinkle with salt, pepper, garlic, and ginger.
4. Roast for 25 minutes. Drizzle with honey halfway through cooking.
