An easy, super tasty, fail safe marinade.
1. Pour olive oil into a small mixing bowl.
2. Mix together salt, pepper, paprika, cumin, and cayenne pepper and add to olive oil.
3. Add garlic, onions, and parsley.
4. Mix together well with a fork.
5. Slowly add beer (if you add it too fast, it will cause the mixture to foam and bubble).
6. Pour marinade over the chicken in the zip lock bag. Remove as much air as possible from the bag and seal. Turn the bag from side to side to make sure all chicken has been coated with the marinade.
7. Place the bag flat on a small, rimmed kitchen sheet pan and put in refrigerator. Allow to sit at least 1 hour or overnight for best results, turning the bag over every few hours to keep the chicken coated.
Note: if you have a vacuum marinator (best results), skip steps 7. Once chicken is well coated, remove from bad and place into vacuum marinade container. Vacuum seal container. Place in refrigerator for 20-30 minutes.
For best results, use a vacuum marinading dish. Chicken will come out great every time. Use charcoal grill rather than gas for best tasting chicken.
