2. Flatten out on greased parchment paper on a pizza pan. Should be fairly easy to flatten and keep its shape. (I prefer mine thin so I flatten it out to about 13-14" in diameter)
3. Put it in the oven, middle rack, at 425°F for 10 minutes.
4. Take out and add toppings. (I use pizza sauce that I get at Loblaws that only has 1 net carb per 2 tbsp - the brand name escapes me now.) There is plenty of meat and cheese in the crust, so there is no need to go overboard with the toppings - I usually add pepperoni, bacon, and a few green peppers or zucchini, and another VERY THIN layer of mozzarella on top.
5. Put back in the oven for 5 minutes, then broil for 45 seconds or so at the end.
6. The result is a perfectly cooked pizza. The crust is nice and crispy and holds together just like a regular piece of flour-based crust. The pizza is not too "heavy" because it uses chicken instead of beef.
The key in this recipe is the amount of almond flour. Most similar recipes I've found only call for 1 or 2 tbsp of almond flour, but I found that the more you add, the crispier and more manageable the "dough" is. 1/2 a cup of flour is only 6 net carbs, so as long as you haven't gone crazy with carbs during the day, this recipe is very much acceptable. (If this is too many carbs for you, you can cut back on them by using less almond flour, and by making your own pizza sauce from fresh tomatoes and spices.)
