15 ounces chicken breast; boneless, skinless
1 medium onion; white onion
10 ounces white mushrooms
2 each bell pepper; one red and one green
3 cloves garlic
2 medium mango
2 tablespoons fish sauce
3 tablespoons low-sodium soy sauce
1 tablespoon unpacked brown sugar
1 tablespoon fresh lime juice; juice of one lime
1 dash red chili pepper flakes
1 dash kosher salt
3 1/2 cups cooked brown rice

Original recipe makes 6 Servings



Dice the raw chicken, spray the pan with PAM and cook until tender, remove from heat.

Dice in big chunks the onion, mushrooms, and peppers and toss in the wok or large frying pan on medium high heat until cooked.

In a separate saucepan, crush garlic and add sliced mangoes, lime juice, fish sauce, soy sauce, chili flakes and brown sugar.

Simmer and stir on low heat until flavors meld. Serve all over brown rice.

I substituted carrots for mushrooms, increased the amount of lime to 2.5 tablespoons, used 1/2 the onion and added green onions and shallots because I had them to use up. This turned out absolutely fantastic, a delicious Thai dish and I will definitely make again!! Thank you so much for sharing this recipe!

Pretty good. Tastes like a more savory version of sweet and sour chicken. I found the fish sauce overwhelmed the dish with the savory taste. Like others, blended the sauce after cooking it. I don't think I would have liked the sauce chunky. Next time I try this I'll make some changes - add: cashews and pineapple chunks, sub: some sort of vinegar for the fish sauce. This would make it more like a sweet and sour dish (which is the taste I was hoping for). Then we'll see if it stays on my recipe list.

Added a small handful of fresh grated ginger to the sauce and subbed the fish sauce with rice vinegar. This was the best mango chicken I've ever tasted!

LOVE LOVE! sweet Mangoes & spicy Chicken, whee! This made me wanna jump up and dance it was so yummie! I did add some hot sauce but otherwise perfect!

could use more chili pepper..maybe double & chipotle. i don't think it needs the brown sugar witht he fruit..a bit sweet for me. Might try it again with peanuts or some other nuts on hand. Like it overall.

This has to be one of the best dishes ive made! i put the mango sauce ingrediants in the blender prior to heating on skillet.

Oops! I just found the original recipe and it calls for 10 oz. white mushrooms. Hmm... any way I can edit the recipe?

I noticed that there was no mushrooms in the ingredients list yet in the instructions it asked for mushrooms so I was curious if anyone has any suggestions for how much mushrooms should be added and what kind of mushrooms would be best
