A delicious banana fruit cake, moist and fluffy.
1. Preheat oven to 375F/180C
2. Mix well all dry ingredients,sift and ready for use
3. Beat butter with a electric whisk till creamy and fluffy
4. Add sugar gradually and continue beating
5. Add egg yolks one by one and then mashed banana beat till totally combined
6. Mix banana essence and vanilla extract thoroughly in the mixture
7. Using a spatula or hand whisk, fold in the dry ingredients gently and gradually till mixed, do not overdo the batter
8. In a clean bowl, beat the egg white till firm, and gently fold it in the batter
9. Pour the batter into cake molds
10. Mixed the raisins and dried fruits with a tbs of flour and add to the batter generously, gently push the dried fruits into it with a small spatula till evenly spread
11. Bake for 50 minutes or when a toothpick inserted comes out dry
12. While it is still piping hot, lightly sprinkle the rum or brandy on the surface of cake
13. Let it cool for 10 minutes before serving. The cake tastes much better when it is still warm
Do not over mix the batter when adding the dry ingredients and egg white.
