Just like the store bought version, but much better! Toffee candy covered in milk chocolate and almonds.
Melt butter, sugar, water and corn syrup on medium high heat stirring frequently until it reaches 300 degrees (hard crack stage)
Once it reaches 300 degrees, add 2 cup of sliced almonds stirring in to mixture quickly. Then spread onto a cookie sheet (11 x 17). Let cool completely, then melt 1/2 of the chocolate on low heat and pour, then spread over top of hardened candy, followed by sprinkling with 1/2 cup chopped almonds. Take a sheet of wax paper and place it over the top and then invert the entire pan onto another cookie sheet. The wax paper keeps the chocolate from sticking to the pan. Once inverted to another pan, melt the other half of the chocolate and spread on the candy followed by another 1/2 cup of chopped almonds. Let cool completely, then break into pieces and serve!!
Notes:
1. I usually buy sliced almonds, then put some in a ziplock bag and pound with a rolling pin or large can to chop into small pieces for sprinkling on the chocolate.
2. The toffee takes several hours to completely cool, and you don’t want to add chocolate to it while warm since you might have issues with it adhering to the toffee. Also, wipe the toffee with a paper towel just before putting on the chocolate, this will help it adhere better.
3. The chocolate takes about 24 hours to completely set up.
4. Don’t leave the butter,sugar, corn syrup and walk away. It can go from barely melted to burning quickly.
