For special occasions
Do stuffing first:
For alternate stuffing 2, toast bread in oven till golden 12-15 min 350.
Meanwhile heat butter in skillet med-high, add onions and celery. Sautee 8-10 min.
In separate bowl mix bread, vegetables, and remaining ingred.
Turn into greated 3 quart baking dish.
Cover with foil, and bake 30 min. Remove foil and back till crusty (10 minutes). Serve immediately.
Alternate stuffing (first recipe):
cook celery and onion (and carrots if using) in butter until tender (5 minutes). Take off heat and add spices (sage and pepper, or salt, nutmeg and pepper).
Put bread in large bowl (with apples, walnuts wheatgerm if using). Add the cooked stuff and drizeele with enough broth to moisten, tossing lightly to combine.
Place excess stuffing (that isn't in turkey) in casserole, and bake, covered at 325 for 40 or so minutes.
Turkey:
Pre-heat oven to 325
Rinse turkey inside and out, dry with paper towels, salt inside of turkey
Spoon in stuffing into cavities, close up neck cavity
Tuck drumsticks under skin band at tail, and twist wings under back.
Put turkey, brest side up on rack in shallow roasting pan.
Brush with oil cover with foil
Roast for 2.5 to 2.75 hours then take off foil and cut band of skin between drumsticks. Continue cooking for another 45 minutes. Juices should be clear and center of stuffing at 165 F
Cover and let stand for 15-20 minutes then carve.
Meanwhile, do gravy:
Drippings into a measuring cup, scoop the fat, and use 1/4 of the fat in a saucepan with the flour. Get the rest of the drippings in the measuring cup (without the fat) and add broth till 2 cups. Add all at once to saucepan. Salt and pepper to taste, and cook over medium till thickened.
