These are great to make ahead of time on a Sunday and reheat one or two every morning of the week. You can substitute other veggies for the broccoli, and spicier cheeses for the cheddar.
1. Preheat oven to 350°
2. Arrange 12 slices of bacon on a non-stick pan and bake at 350F until fully cooked but not crisp.
While bacon is cooking...
3. Cook 10 oz of broccoli (6 min on high in microwave) and chop by hand or in food processor.
4. Whisk eggs, heavy cream, salt and pepper in large mixing bowl. Let sit at room temperature until bacon is ready.
5. Grease each well of a 12 cup muffin tin with butter, coconut oil, or Crisco.
When bacon is fully cooked but not crisp...
6. Add cheese and chopped broccoli to egg mixture and stir.
7. Line each well of the muffin tin with a piece of bacon and pour equal portions of mixture into each well. (Depending on size of tin, may have some mix left over. Do not go past 3/4 full.)
8. Bake for 25 minutes. Test with knife for firmness.
9. Cool for at least 10 minutes before removing from muffin tin. Once out of the tin, you should be able to pick up a cup by the crispy bacon edge and eat it by hand.
