or for a change up when nearly done add 2 more cups chicken broth and a cup of rice, simmer till rice is tender,................................

Or for a change up when nearly done add 1 more cup chicken broth and top with dumplins, simmer till till done ................................

This can be a very, very Hearty one pot meal.

Ingredients

1 1/2 cup onions; chopped
1 large Green pepper; ruff chopped
1/2 cup celery; chopped
2 tablespoons garlic; minced
1 lb kebasa sausage; sliced about 1" thick
1/4 teaspoon black pepper
1 teaspoon dried thyme
1/2 teaspoon cayenne
1 teaspoon salt
2 smoked ham hock
3 cans kidney beans
2 cups chicken stock

Preparation

In a pot, saute the onions, celery, green pepper and garlic for 1-2 minutes. Add the sausage, black pepper, thyme, cayenne, and salt, saute for 2-3 minutes. Add the ham hock and beans. Cover the mixture with the stock. Bring up to a boil and rice and reduce heat to a simmer. Serve when the rice is done.
