Saute'd chicken w/ yummy sauce.
Dredge chicken in flour. Heat oil in skillet and sauté chicken for 2 1/2 minutes on each side. Set chicken aside on warm platter.
Add onions and garlic to skillet and more love oil if needed. Cook until onions are soft. Add enough flour to absorb oil. Add cream cheese and herbs. Whisk until smooth. Slowly add chicken stock and cream. Chop 1/2 the spinach and add to sauce, and cook until wilted. Keep sauce warm.
Wilt remaining spinach in a skillet. Make a bed of wilted spinach on each plate. Place 2 pieces of chicken on spinach. Pour sauce over chicken and crumble Gorgonzola over sauce.
Serve with white Burgundy or Chardonay.
