From Nancy Biesinger. Great for a crockpot.
Place chicken in the bottom of a slow cooker. Top with sweet potatoes.
Toss the onion, garlic, thyme, maple syrup, and Dijon mustard in a small bowl. Pour the mixture over the chicken and sweet potatoes.
Cover and cook for 4-5 hours. Serve over rice.
