Trim stems on broccoli to get florets.
Combine olive oil, red wine vinegar, garlic, mustard, kosher salt and black pepper in bowl and wisk.
Toss in florets and let it marinate for 10 minutes.
Spread marinated florets on a rimmed, aluminum sheet pan. Place in oven for 10-15 minutes.
