A tasty BBQ chicken
Peel the zest off a lemon. If you like strong lemon flavours grate the zest off (then it will stay on the chicken).
Peel and crush the garlic cloves.
Mix the above in a bowl with the olive oil, cumin, saffron paprika, crushed chilli and chicken pieces, till all the chicken is thoroughly coated.
Cover and refridgerate for a few hours or overnight if possible.
Pre-heat the BBQ to a moderate heat.
Shake any excess moisture off the chicken and grill it, turning it over at least once, until the juices run clear.
Meanwhile, chop the corriander, parsely and spring onions and juice the lemon you peeled the zest from.
Combine all the corriander, parsely, lemon juice and spring onions and pour into 4 dipping bowls, and leave it to infuse.
Serve the grilled meat with the dipping sauce on the side.
