Refrigerated oatmeal cookies.
Cream shortening, white sugar, brown sugar and eggs.
Add flour, salt and soda. Mix thoroughly.
Add oats and vanilla.
***Shape into long rolls about 2 1/2 inches in diameter. Chill for several hours or overnight.
Cut into slices. Place on ungreased cookie sheet.
Bake 8-10 minutes in 375-400 degree oven.
***Rather than shaping into rolls and refrigerating, I drop the dough onto the cookie sheet with a small ice cream scoop. And, then bake.
