Delicious, easy and tropical dessert. Easy to bake and take to your next event!
Preparation
With electric mixer on medium speed, wisk eggs, oil and water. Add cake mix, and continue to mix thoroughly. From the can of pineapple, scoop out 3/4 c of pineapple meat only. Mix in yogurt, crushed pineapple, and continue to mix. Add grated coconut and hand stip with a spoon or spatula until mixed in. Pour into 11 x 13-inch pan.
Bake at 350F until done. (30-35 mins) Remove from oven and cool.
Topping
Dissolve pudding in pineapple with juice then add to cream cheese and wisk with an electric mixer until smooth, adding remaining ingredients, except coconut, slowly. Allow to rest slightly. Poke holes in top of cake with a chopstick or wooden spoon.
Pour over cake and spread evenly when completely cooled.Sprinkle top with coconut. Can be garnished with colored sugar or other adornments as desired. Refrigerate.
