Italian cookie baked on a pizzelle iron
Beat eggs, adding butter and vanilla. Add sugar gradually. Beat until smooth.
Miix flour and baking powder in a bowl. Add to egg mixture and beat until combined.
Dough will be sticky enough to be dropped with a spoon.
Drop one heaping teaspoon of dough evenly in the center of each bottom plate. This will make two full-size pizzelles at a time.
Cook for 60 to 65 seconds and cool on waxed paper.
Makes 60 pizelles.
