Put into screw top jar and cover with sherry. ( I usually add extra sherry to the jar so I can add the ginger flavoured sherry to stir fries)
Refrigerate. This ginger will keep for months in the fridge and you will always have ginger at hand.
This recipe was given to me my an aunt more than 30 years ago, she said make sure the ginger is nice and fresh.
