this came from a ham & cheese pretzel pieces recipe didn't like it so much, but the pretzel dough was great
In a small bowl, combine:
Stir together the brown sugar and the warm milk.
Stir until the sugar is dissolved.
In a large bowl, combine:
2 1/2 cups flour, the warm milk mixture, and the package of yeast.
Stir until a soft dough forms.
Add more flour as needed (up to 1/2 cup).
Turn the dough out onto a lightly floured surface and gently kneed a few times, forming a smooth ball.
Brush the inside of a large clean bowl with olive oil.
Transfer the dough to the bowl and cover tightly with plastic wrap.
Allow it to rise in a warm, draft free spot for about 2 hours, or until the dough doubles in size and bubbles appear on the surface.
When done, turn out onto a lightly floured surface.
Divide it into 4 equal pieces.
Divide into ropes.
Cut into whatever size to make pretzel bites or full size pretzels.
Transfer pieces to a baking sheet with rack or a parchment covered baking sheet.
Let them rest, uncovered, at room temperaturre for 30 minutes.
Preheat oven to 400 degrees.
Bring 6 cups of water to a boil.
Add 4 tspns baking soda to the boiling water.
Reduce the heat to a gentle simmer.
Boil the pieces in batches, cooking each for about 20 seconds each and turning once.
They should look slightly puffed when they are done.
Use a slotted spoon to transfer them back to the baking sheet.
Bake in the preheated oven until they are puffed and golden, about 15 minutes.
While cooking, melt butter.
Out of oven, brush each piece with melted butter.
Sprinkle with kosher salt.
Serve warm!
