Sooo good
Preheat oven to 350?. Combine cookies, pecans and butter. Press into bottom of 9-10 in springform pan, spreading evenly. Bake for 10 min. Remove and cool thoroughly before adding filling.
Beat cream cheese until blended, add brown sugar and beat until incorporated.
Stir together flour and dry spices. Add flour mixture to cream cheese mixture and beat thoroughly to combine, scraping the bowl occasionally.
Beat in the sour cream and eggs 1 at a time, scraping down the bowl after each egg. Add vanilla and pumpkin and beat until combined.
Pour filling into prepared pan. Place on center rack of oven and bake for 1 hour, or until internal temp is 180?. ?
Note* cheesecake may require up to 20 min more baking time.
Cool to room temp and refrigerate overnight.
Top each serving w/whipped cream, faux holly garnish made w/mint sprig and small cranberry.
Note* make a day or 2 ahead to give it time to mellow.
