Quick Easy and Delicious Pineapple Cobbler

The simple version of upside down pineapple cake without sacrificing the flavor. A cinch to make whenever you don't want to slave in the kitchen but seems like you did.


1 stick butter
1 cup sugar
1 cup Brown sugar
1 cup Milk
2 (8 oz) cans pineapple; or 1 fresh pineapple, chopped
1 cup self rise flour

Original recipe makes 4 Servings



Melt stick of butter in baking dish. Pour in 1 cup brown sugar. Do not stir add pineapple (drained) In bowl combine flour, sugar, milk. Pour mixture over pineapple.

You choose to add a small amount of pineapple juice to your batter for more flavor.

Cook in oven on 375(F) for 30 minutes or until top is golden brown.

I really enjoyed this recipe. I doubled the pineapple and added some chopped nuts and shredded coconut. I also used 1 cup flour with 1 tbsp baking powder since I didn't have self-rising flour. Very yummy!
