For the vinaigrette, put all the ingredients except the Mascarpone cheese and the olive oil and mix in a blender. When everything is mixed add the olive oil and continue mixing till you have a cream, add the Mascarpone and keep beating till you have a softer cream.
Cook the rice and quinoa (separated) according to the instructions, pass on cold water, drain very well and put in a bowl. Add all the ingredients except the green leaves and mix well. Serve over a layer of green leaves.
