Awesome Tex-Mex salsa that will blow any canned or restaurant salsa out of the water. Seriously, try it. It's amazing.
Put about half of the onion in the food processor/blender with everything else.
Pulse food processor until all ingredients are chopped and mixed evenly.
After salsa is processed, dice the rest of the onion and add it to the salsa. Use as little or much as you wish.
It's pretty spicy as is but you can add another jalapeño or more cayenne if you prefer extra spice.
