Suggest a better descriptionHeat the olive oil in a large nonstick pan, and cook the sliced red onions, garlic, bay leaves and thyme for 15 minutes, stirring frequently. Add the vinegar, honey, salt and pepper and cook for 15 more minutes (total of 30 minutes).
Spread the dough into a 9 " pie plate or tart pan. You can also use a rectangular or square pan (like I did), or even 4 to 6 individual tart pans. You can bake the pizza on a cookie sheet, and make a larger pizza with a thinner crust.
Spread the red onion mixture over the herbes de Provence pizza dough (or dough of your choice). Cut the cheese into 8-10 equal parts and place over the onions.
Bake at 400F – 200 C for 25-30 minutes, or until the dough is cooked and the cheese has a nice golden colour.
