Roast and season roast with S&P. Heat additional
Oil in non stick fry pan and gently sear on all sides. Remove roast
Placing it in a baking dish with small amount of water.
Bake approximately 1 1/2 hrs. Temp should reach 160F. Let rest
For 10 min.
Check midway to assure stuffing doesn't burn. If so, cover ends with alum foil
