Cut the celery into large pieces
Put the celery with the rosemary and thyme, wrap in the bacon and tie.
Heat some veg oil in a Dutch oven.
Brown the short ribs in a Dutch oven with the bacon pack
Add the garlic.
Remove the ribs to a plate.
Add the flour and cook a few minutes.
Add the carrots and onion and sweat them.
Add the liquids and cook a few minutes.
Add the ribs.
cover with a piece of parchment or wax paper.
Put in oven and cook for about 2-1/2 hours.
Serve with garlic mashed potatoes.
