Suggest a better description1) Preheat oven to 350 degrees Farenheight.
2) Heat 1 teaspoon olive oil. Add red pepper, oregano, salt, spinach, and garlic.
Cook 3 minutes. Set aside and stir in 1 tablespoon marsala, cheese, and
capers.
3) Cut a horizontal slit through thickest part of chicken. Stuff about 1/3 cup of
spinach mixture into chicken. Secure chicken with toothpicks.
4) Roll chicken in breadcrumbs. Add rest of olive oil. Cook chicken about 12
minutes until brown. Remove from pan. Add remaining marsala and sherry
vinegar. Combine water and cornstarch. Add to pan. Bring to a boil for 1
minute. Add chicken. Cover and simmer or put in baking dish and bake for
30 to 40 minutes.
