Suggest a better description1. Put flour into dish and cover with a layer of Pepper, season with Salt and smoked salt and then mix together
2. In a separate dish mix the egg and hoisin sauce, cut up the chicken and add to the egg mix
3. Transfer in small batches the chicken from the egg to the flour mix, ensure each piece of chicken is fully coated and than place in the deep fat fryer.Remove chicken from fryer, cut into small pieces and fry in a wok for a few minutes to ensure chicken is crispy. The add a light coating of salt and smoked salt, repeat for each batch
4. Mix in chillies, garlic and chicken and fry with a small bit of oil
5. Add spring onions and fry for 1minute and serve
