A tasty, healthy way to prepare Prawns
Marinate the prawns for at least an hour in the fridge
Heat the EVO in a large skillet to 275 degrees
Add Garlic slices, Celery, Squash, and Red Onion and 'sizzle' for 10 minutes, seasoning with 1 tsp Chipotle Seasoning
Add Black Beans and Tomatoes with Chiles, reduce heat to 220, and simmer for 10 minutes
Add Prawns on top and simmer for 2-3 minutes, flip the prawns and go another 5 minutes
Drizzle Lime Juice on top and spoon onto plates
Add a dollop of Guacamole
Salt and Pepper to taste, and serve!
