This is a wonderful stir fry recipe that I have made over and over again!
Mix Sauce ingredients together in a small bowl and set aside. Meanwhile in hot skillet cook Chicken in olive oil, garlic and ginger. When chicken is cooked through, add bell pepper and onion and stir fry 1 minute. Add sauce mixture and cook until thickened. Stir in peanuts. Serve over white rice.
