Suggest a better descriptionTrim fat from meat, cut into cubes. Heat oil in dutch oven. Add meat. Cook 7 to 10 minutes until browned.
Add onions, garlic and spices, stir about 1/2 minute. Add tomatoes and water. Cover and bring to a boil. Decrease heat and simmer about 1 hour. Remove 1 cup of broth from meat and place in a medium pot. Continue to simmer lamb cover another 30 minutes. (Add extra water if needed. Add chickpeas, prunes and salt; simmer 20 minutes until meat is tender. Uncover and simmer until thickened.
Meanwhile add butternut squash to broth in pot. cover and bring to a boil, simmer for 20 minutes until tender. Add zucchini to squash in the last 10 minutes.
Stir into lamb mixture and serve with couscous cooked in saffron scented water or stock.
