My grandfather's recipe for a light and tasty side dish that goes well with just about any entree. A great way to sneak some extra veggies onto the plate. Kids eat these up like crazy.
Thaw the spinach in the microwave and drain most of the liquid by either dropping the spinach in a colander and pressing with the back of a spoon or wring the spinach in a clean cotton dish towel.
Combine the spinach, egg, flour, cheese and lemon juice in a mixing bowl to make a stiff batter.
Coat the bottom of a skillet with EVOO and heat to medium-high heat. (An electric skillet works nicely for this dish.)
Using two large spoons, gently drop the spinach batter into the oil, flattening them a little to medallions about 2 inches in diameter. Cook about 1-2 minutes, until the edges look crisp and golden brown. flip and finish cooking.
Drain the fritters on a paper towel to emove any excess oil and serve.
