In a large skillet over medium heat, heat the oil. Tear the prosciutto into large pieces and cook until crispy, about 2 minutes. Remove from pan and drain on paper towel. Add the garlic and shallot to the pan and cook until softened, about 2 minutes. Add the broth, noodles, peas, spinach, salt and pepper and cook until the noodles are heated and almost all the chicken broth is absorbed, about 5 minutes.
Remove from heat, add feta, basil and crispy prosciutto and toss.
