The hidden flavors in the dish will make you keep coming back. Use fresh sausage. You may consider using stuffing style bread crumbs and broth as a binder if you want a stiffer filling. The real treat of this dish is the flavored butter. Use it liberally. You won't be disappointed.
Melt butter with rosemary over low heat until very heated and rosemary has had a chance to simmer and infuse its flavor. Add honey and truffle salt. Reduce heat to lowest setting to keep the butter warm.
Heat the olive oil over medium heat and gently cook the sausage. Do not overcook as it will cook more when smoked. Add the raisins, walnuts and panko. Mix well. Set aside.
Wash the pears. Cut them in half from top to bottom. Cut a small piece off the bottom of each open half so they can sit balanced. Scoop out as little or as much pear as you'd like so you can fill with stuffing. I recommend leaving at least a 1/2-3/4" walls as the pears will be very soft when done and this will aid in holding its form. Brush the pears liberally with with butter and drizzle a little in the middle
of each pear. Fill with stuffing to your liking and drizzle a little more butter over the filling.
Smoke the pears on low heat (180 degrees if possible) for 30 minutes. Increase the temperature to 300-350 and smoke for another 15-30 minutes until the pears are fork tender. Remove from heat and allow to sit for 5 minutes. Drizzle with balsamic fig glaze and serve.
