Big Pasta Omelette With Cheese And Tomato Sauce
Preheat the oven to 200°C and brush a round, non-stick
baking tray roughly 15cm in radius (or any small baking tray
will do) with 1tsp ghee.
Wash and dry all the veggies (See “How To Do Things
Quicker” in the appendix). Slice 2 tomatoes into 1cm circle
slices.
Peel and finely chop 2 carrots (See “How To Do Things
Quicker” in the appendix) and cut 2 zucchini into short
strips. Crush 1 clove garlic.
Heat 1tsp ghee in a non-stick frying pan over medium heat
(See “How To Do Things Quicker” in the appendix). Cook
the garlic and zucchini until the zucchini is tender.
Lightly beat 9 eggs in a large mixing bowl and mix in the
baby spinach, 40g of grated Parmesan, 2tbs dried herbs,
the zucchini and carrot.
Pour the mixture into the baking tray and top with the
tomatoes. Place it in the oven and cook for 25 minutes or
until it is firm and slightly brown on the top.
Set the table and make a huge side salad with the extra
veggies you bought.
Serve and enjoy! (You can add a little tomato sauce to the
plate for the kids)
