Suggest a better descriptionBeat the marscapone in a small bowl until soft. In a separate bowl beat the egg yolks with the sugar (reserving 1 tbsp) until the mixture is pale yellow and fluffy. Gradually beat in the mascarpone.
Using an electric mixer or wire whisk, beat the egg whites with the salt until they form stiff peaks. Fold the egg whites into the mascarpone mixture.
Line one large or several individual serving dishes with the savoilardi. Add the reserved sugar to the coffee and stir in the liquor. Sprinkle over the savoilardi.
Cover with half of the egg mixture. Make another layer of savoilardi & moisten with coffee/liquor. Cover with remaining egg mixture.
Sprinkle with cocoa powder & refrigerate at least 2 hours or more before serving!
If even a small amount of egg yolk gets into the egg whites, they won't beat properly.
Also, take the mascarpone straight from the fridge. Don't let it sit on the counter, it can curdle easily.
