This is my rendition of Chicken Tortilla Soup, quick, healthy, and oh so amazing!
This can be cooked Fast or Slow
I used my pressure cooker and it was Amazing!
Heat pressure cooker over medium/high heat and add oil, onion, jalepenos, and garlic.
Sautee until softened a bit.
Add tomatoes, whole raw chicken breast, 6 cups of chicken broth, seasoning packet, and cilantro.
Pressure cook for about 15 minutes on the highest setting. (Mine only has 2)
Remove from heat and release pressure.
Remove chicken from pot and shred. Place pot back over heat, add the remaining two cups of chicken broth and shredded chicken and bring back to a boil to heat additional broth.
Salt and pepper to taste and serve.
Garnish with chopped avacado, sour cream, cheese, and your favorite tortilla chips!
To cook in a crockpot just add all ingredients and cook on high about 8 hours. Chicken will shred itself.
