**If you are ambitious you can double the amount and make numerous servings to freeze for 3 months
Directions:
Dice onion, saute in Pam.
While onion cooks, dice mushrooms and then add to stove
Dice carrots, then add
Dice zucchini, then add
Add spices at will: generous dashes or pinches of Italian Seasoning, Rosemary, Savory, Garlic, Salt, Pepper, etc.
Lower heat (low-ish), cover, and let simmer a few minutes
Grease 9x13 pan with Pam, cover bottom with thin layer (1.3 cups-ish) of sauce, then 4 hard noodles across longways; break 5th noodle longways and use to fill space at bottom
Use large laddle to spoon half of veggies ontop of noodles
Cover with 4 servings of cheese
Cover with 1.3 cups of marinara sauce
Repeat layering with 5 noodles, remaining half of veggies, 4 servings of cheese, 1.3 cups marinara sauce
Final layer is only noddles, then pasta, then cheese
Bake, covered, at 375 for 40 minutes
If confident, raise oven rack and lasagna to near top of oven, turn Broil to High, and broil for ONLY TWO MINUTES, to crisp and brown the cheese
Let sit about 15 minutes to "set"
Makes 6 pieces, each piece has 360 calories and 24 grams of protein
