Suggest a better description1. To make cashew bechamel sauce: In a blender add cashews, water, lemon, 2 cloves peeled garlic, nutmeg, salt and pepper. Let stand while preparing vegetables.
2. Sauté small white onion in 1 tablespoon olive oil til translucent and soft. Add to blender. Puree mixture on high till smooth and creamy. Mixture will be slightly runny, the extra liquid will be soaked up by the noodles.
3 In the same pan saute the red onion til translucent and just beginning to caramelize in 1 tablespoon olive oil. Add 1 clove minced garlic and saute 30 seconds more until garlic becomes fragrant.
4. Add remaining vegetables to the pan and saute with the onion and garlic for 3 to 5 minutes until vegetables are partially soft.
5. Assemble lasagna: In an 8x8 inch caserole dish our 1/2 cup of the ragu sauce on bottom of pan. Layer 2 lasagna noodles in single layer on sauce, breaking to fit pan if necessary. Layer another 2/3 cup ragu sauce on noodles, then 1/3 of the vegetable mixture, then one third of the cashew bechamel, followed by 2 tablespoons of fresh parsley . Repeat for two more layers using all the vegetables, bechamel, and parsley. Add another layer of noodles and spread with 2/3 cup ragu sauce. Top with vegan mozzarella flavored shredded cheese. Cover dish with aluminum foil and bake in a 350 degree oven for 45 minutes. Let stand for 10 minutes before serving.
