This is a very easy soup to make for any number of people. Simply multiply the ingredients by the number of diners. (Yoga Mind and Body)
Heat the oil in a pan, and saute the vegetables. Add the water , and bring to a boil. Cover with a lid , and simmer for 20 minutes. Add the spinach or greens, and cook for another 5 minutes. Season with salt or tamari and serve.
