Sure to become a new family favorite, this simple easy to follow recipe isn't as spicy as it sounds. My Daddy's original recipe called for andouille sausage, which isn't readily available north of the Mason-Dixon. With some help from my southern relatives (and a few failed experiments), the "Yankee" version was born.
Preheat oven to 350 degrees F.
In a large skillet over medium-high heat, combine sausage, chicken, Cajun seasoning and sage. Cook until chicken is no longer pink and juices run clear (about 8 minutes). Remove meat with a slotted spoon and set meat aside.
Sauté onions, celery, bell pepper, and garlic until tender in the meat juice. Remove from heat and stir in cooked meat and 1 container of Alfredo sauce.
Lightly grease a 9x13 baking dish. Cover bottom with 4 lasagna noodles (it's ok if they over lap a little). Spread with 1/2 of meat mixture. Then, spread with 1/2 of the mozzarella cheese. Layer with lasagna noodles. Spread the remaining meat mixture and cover with lasagna noodles. Pour on the reserved jar of Alfredo sauce and top with remain mozzarella and sprinkle with Parmesan cheese.
"Tent" with aluminum foil (shiny side in). Bake for 1 hour ( or until bubbly). Let stand for 15 minutes before serving.
Don't skip the red peppers! They are key to the flavor. They can be cut in thin strips so the picky eaters can pick them out.
Depending on the brand of oven ready noodles, you may need to add about a 1 cup of water before you top with cheese. The pan should be about 1/2 full of sauce before you bake. This will ensure the noodles are cooked.
1 pound is small frozen shrimp (tails removed and deveined) can be substituted for the chicken.
