Grease bottom of 2 9x5x3 loaf pans.
Blend all ingredients together on low for about 1 minute, scraping sides of the bowl constantly.
Then, beat on medium speed for about 1 minute. Don't over mix.
Pour into greased pans and bake for 50-60 minutes or until a toothpick comes out clean.
Or pour into greased mini loaf pans and bake for 20 minutes or until a toothpick comes out clean.
Cool about 10 minutes then remove from pan.
For lemon use all white sugar, omit the cinnamon & replace the vanilla extract with lemon extract.
For chocolate, omit the cinnamon & add 1/2 cup cocoa powder.
For another chocolate variation use 1 Tbsp almond extract & 1tsp vanilla. Add chocolate chips or slivered almonds.
