Beat eggs. Stir in oil, sugar, zucchini, and vanilla.
Sift flour, baking powder, baking soda, cinnamon, and salt.
Add to egg mixture and blend well.
Stir in nuts.
Spoon into 2 well greased loaf pans.
Bake at 375 for 1 hour.
