A bit more exotically spiced than traditional chili using Indian spices for the health benefits and flavours. As a mostly Paleo household, this is a twice a year treat and we enjoy it thoroughly! It's full of protein, antioxidants, and fibre. The fat can be kept in for flavour if you have quality beef. If using grocery generic beef, rinse the fat away and add in your own avocado oil to bring out the flavours of the spices and meat. Enjoy!
Note: This is a very large yield pot of chii for parties or for freezing extra.
Cook beef in fry pan in water, breaking apart as you go. Optional to add salt pork or a bit of Bragg's liquid aminos for flavour. Remove and put in crock pot with all the washed beans and the tomatoes.
In fry pan, sautee onion until tender and fragrant in avocado oil. Add 3 tBsp chili spice and 1 tBsp of each of the rest, including the garlic, except salt and pepper. Sautee until fragrant and add to the chili and stir. Leave the crock pot on high until it's bubbling, then reduce to simmer for a day. Add extra spices and salt and pepper as needed. (optional to add frozen corn to the recipe for sweetness at the last hour of cooking. Nutritionally not beneficial, but really tasty!)
Serve with sourdough bread and grassfed butter and a dallop of creme fraiche or homemade coconut yogurt. Freezes well but leave room to expand or the lid will pop off when frozen.
I mostly eat Paleo and avoid grains and lentils due to anti-nutrients, but beans that are soaked in cans generally have most anti-nutrients removed and sourdough bread is a fermented grain to make it more nutritious. I use it only on rare occasions because it is NOT an optimal food, whereas canned lentils are very nutritious. People on low carb diets or sensitive to phytates should not take these foods and those with digestive issues should use digestive enzymes with this meal. Namaste!
