Add in the garlic and fry until raw smell goes away.
Add all the spices and fry until the turmeric doesn't small raw.
Add in the tomatoes with a splash of water to cool the pot.
Once the tomatoes are softened and you are left with a paste in the pot, add the potatoes and water to cover. Bring to a simmer.
Add the cauliflower once the potatoes are almost cooked.
Add the peas at the very end.
Garnish with chopped cilantro.
