Esther Beimborn's favorite recipe for pie crust
Mix flour and salt. Add lard, mix with pie mixer or hands until crumbly with small pea-sized particles. Combine beaten egg, water, and vinegar. Add to dry ingredients, mix. Place on flour lined pastry cloth, add extra flour if too moist. Roll out on pastry cloth.
Makes 3 single crusts. Can cover one with cling wrap and keep for a week in refrigerator. Bake according to pie recipe.
