Paleo friendly recipe
Preheat oven to 350 degrees.
In medium skillet, sauté apples, water, 1 tablespoon cinnamon and vanilla until apples are consistency of apple pie filling - about 10 minutes. Once apples are finished cooking, add coconut oil (or butter) to mixture and stir until oil is melted. Allow the mixture to cool for a few minutes before adding to egg mixture.
In medium bowl, whisk eggs, milk, flour, 1/2 tsp cinnamon, syrup, baking soda, and salt until well combined. Add apples mixture to egg mixture.
Pour into a well greased 8x8 pan. Bake for 50 minutes until top is golden brown and done through.
Option: add small cubes of cream cheese to mixture before baking.
